This one is somewhat original, with a bit of a twist. Instead of that can-shaped jelly in the middle of the table, why not go homemade and create a beautifully tart apple cranberry sauce. In a saucepan, add ¾ cup orange juice, ¼ cup water, ⅓ cup brown sugar and dissolve over medium heat. Then add 3 cups of fresh cranberries, one large chopped apple, ½ teaspoon cinnamon, and ¼ cup maple syrup. While stirring, wait for the sauce to thicken up before taking it off the heat.
The great thing about this recipe is that you can control the sweetness, adding more or less syrup or sugar to suit your taste. The apple and cranberries will add a natural bite that you won’t be able to get from the premade sauces. You can even zest a lemon or orange if you would like your cranberry sauce to have more of a zing.
While there are many turkey alternatives on the market, you may be tired of the typical tofurkey that makes its rounds this time of the year. If this is the case, you can make your own fairly easily. You will need the following ingredients; 2 cups vital wheat gluten (seitan), ½ cup chickpea flour, ½ cup nutritional yeast flakes, 2 teaspoons of onion powder, one tablespoon poultry seasoning, one teaspoon garlic powder and a pinch of pepper. For the wet ingredients, you will need ¼ cup tahini, ½ grated onion, one cup vegetable broth, 3 tablespoons of soy sauce and one tablespoon olive oil.
Once you have gathered all of your ingredients, mix all of the dry ingredients in a bowl. Now blend the wet ingredients into a separate bowl. Add the wet mixture to the dry ingredients little by little until you form a dough. Let it rest for about 50 – 60 minutes and knead for 10 minutes. Next place your dough into a baking pan and place in a preheated oven (350 degrees F) for approximately 3 hours. This recipe can be made the day before and reheated – which will save you time this festive season.
Nothing says comfort food more than the perfect fluffy mashed potatoes. While these spuds are generally made with cream and butter – there are many vegan alternatives that are just as scrumptious. To make your vegan-friendly mash, you can take six to eight potatoes of your choice, peel them and cut them into quarters. Boil the potatoes in water with a pinch of salt until soft. Fry 10 garlic cloves in some oil and puree. Next, add the garlic to the potatoes and mash together with a few tablespoons of vegan butter, mix in salt and pepper to taste.
This alternative is a great addition to your Thanksgiving table and will surely be a big hit this holiday.
What better way to end off your Thanksgiving feast than with a smooth and spicy pumpkin pie. To simplify matters, you can buy a premade (vegan) pie crust for this recipe. To make the filling, take one can of pumpkin, one cup of coconut milk, ⅓ cup maple syrup, a tablespoon pumpkin pie spice, three tablespoons of organic cornstarch, a dash vanilla extract and a pinch of salt.
Preheat your oven to 350 degrees F. Now mix all of the ingredients for the filling together until well-blended. Pour into the pie crust and pop into the oven for around 40 minutes. Once cooled you can top it off with your favorite dairy-free whipped cream.
Just because you are vegan doesn’t mean that you have to compromise on the flavor or tradition of a Thanksgiving feast. By implementing these recipes you can make your very own holiday food traditions.
